Use this recipe and you'll have a delicious bubbly kombucha drink that kids rave over. It's like champagne when you pour it into a glass- though very low alcohol and not-too-sweet. Great to help a girl get over her diet coke addiction.
It's so simple; it's basically a sweet tea that has a duel kombucha culture added to it.

There is something unique and special that you need to have within you to create this cultured drink. It's a happy attitude. So here is a guide, "whatever is good, lovely, just, of good report- think on these things" ok? Don't make this now if you are not in good spirits. To sum it up, don't make this when you are crabby. It won't turn out yummy and you will have wasted all your time and efforts.
Whatever you do with your kombucha, don't use metal nor plastic in any part of production!
Glass and wood only. No metal pots or stir things, no plastic stir things. Why? Ok, I will tell you. It has been my experience that using metal is like birth control to kombucha; use metal, no babies. Having another kombucha is good. Especially when your one and only is getting very old.

Essentials- get these out, line them up and get started:
I have been using the Pau Mu Tan White Tea and an oolong tea lately (just ask her for it)
sugar -I use an organic sugar
filtered water
approximately a cup of starter- this is very acid
a 4 quart capacity glass pot- find at thrift store cheap- couple of dollars
a home for her- a gallon sized GLASS jar is good
something to cover her home while permitting air flow [flying bug deterant]
I use an unbleached coffee filter. A cotton doily would work fine, as would cheesecloth- you get the idea.

Here is how you use those items to create this delicious healing drink:
Boil 4 quarts of filtered water for 20 minutes. You will end up with nearly 3 quarts. Boiling ionizes the water, ionized water helps to detox the liver, kombucha tea works to do this as well, so why not give it another kick? blah, blah, blah it's all more benefitial to the liver. Or- don't boil it and just bring it up to just before it boils if you'd rather. Then go find out why I said to boil the water AFTER your kombucha is sitting happily in her home in a dark cupboard. Do what suits you right now and git her done!
Add 1 cup of sugar into hot water, stiring to pass into solution, no more granules, completely dissolved. Clear?
Remove from heat before adding 2 or more of these teas: 15 ml green tea, 15 ml black tea, 15 ml oolong tea. [for a total of 2-3 Tablespoons of tea]
Let steep 8 hours or over night- that means you cover the glass pot with a lid and walk away leaving it there until it has cooled.
Strain the leaves off. I use bamboo tea strainer.
Add a tablespoon of starter into that glass jar.
Reserve the rest of your starter for your next batch. Add the little bit of tea that was in excess of 3 quarts to your starter. Put it in its own jar and cover...I'll tell you in a bit just how.
Feel your kombucha. She is very smooth on her top side -smooth side of kombucha goes up- place her inside jar.
As I put some tea and kombucha together I enjoyed the dance that she does. I watch her as she somersaults 'head over heels' and twirls, spinning like a blessed pre-school girl. Then I had to ask myself...
Why do we have to put her in there smooth side up? Does she need to be set straight each time just for good bering? Whatever!
She may begin to dance in her jar if she likes it. Or she may settle to the bottom waiting for this culture to be done and over with. One fat girl [I'm taking kombucha here] just likes to float it like a bathing beauty in the hot lazy days of summer.
Cover jar with coffee filter and secure with rubber band.
Place in cool dark location- your pantry, a cupboard.
Be happy as you create; it affects her. Affect her for good and she will bring you good health. Your kombucha drink will be ready in 7 to 10 days.
